The wine
This Picpoul de Pinet offers great freshness and aromatic floral notes with pear, pineapple and a hint of honey through to a long, deliciously mouthwatering finish. The Gaujal estate was established in 1744 and is run by Laurent Gaujal, who farms his twenty hectares organically overlooking the Etang de Thau. Picpoul de Pinet is grown on the shore of the Etang de Thau, and the lagoon keeps the wine taut where the Mediterranean heat would otherwise flatten it. The traditional match is a plate of oysters farmed in that same water.

The lagoon and the sea moderate the Mediterranean heat, which is precisely what Picpoul needs if it is to keep its nerve. Laurent farms organically and makes Picpoul de Pinet that is fresh, zesty and cleanly drawn.
