Established in 1744, the Gaujal estate has passed down through the family and is now run by Laurent Gaujal, who took over in 2013.The cellar sits in the middle of the village of Pinet, and the twenty hectares of vineyard look out over the Etang de Thau. The lagoon and the sea moderate the Mediterranean heat, which is precisely what Picpoul needs if it is to keep its nerve. Laurent farms organically and makes Picpoul de Pinet that is fresh, zesty and cleanly drawn.
