Domaine Gayrard sits on a limestone plateau in the foothills of the Causses de Quercy and has represented this corner of Gaillac for over five centuries. Maurice Gayrard began bottling here in the 1950s, among the first in the appellation to do so. The estate briefly turned to cereals in the 1990s, but in 2013 Pierre and Laure Fabre returned to their ancestors' land and replanted it with indigenous varieties. The old vines of the former Château Moussans were absorbed in 2018, bringing a second terroir with them.
The estate now runs to 30 hectares, certified organic since 2020 and farmed biodynamically since 2019. The wines are made from varieties that had nearly disappeared, Braucol and Loin de l'Oeil among them.
