Favola Prosecco Extra Dry (20cl)
£4.25
The wine
A fresh, fragrant and fruity Prosecco with aromas of pear and apple. Off-dry and lively on the palate, with an attractively crisp finish. The 20cl bottle is exactly one generous glass, which makes it useful for a great many occasions.
The 20cl piccolo is a single glass, and the format Prosecco is drunk from all over the Veneto without ceremony. Extra Dry is the traditional style, slightly sweeter than Brut, and the Charmat method keeps Glera's fresh pear and blossom aromatics intact where bottle fermentation would bury them.
The producer
Favola
View all Favola winesFavola is a Prosecco label from the Veneto, made under the broad Prosecco DOC that covers a large area of the Veneto and Friuli plains.
Prosecco is made by the Charmat method, with the second fermentation in a pressurised tank rather than in the bottle, and that is a deliberate choice rather than a shortcut. Glera is an aromatic grape whose appeal lies in fresh pear and white-flower character, and bottle fermentation with long lees ageing would bury exactly those qualities under bread and brioche notes. Tank fermentation preserves them.
The name means fable or fairy tale. Extra Dry, despite the name, is the sweeter of the two main styles at 12 to 17 grams of residual sugar per litre, and it is how most of Italy drinks the wine.
