The wine
Monnières-Saint-Fiacre is one of Muscadet's cru communaux, a single-terroir wine aged on its lees for years rather than months. This 2019 comes from old vines on gabbro and gneiss soils.
Years on the lees bring remarkable depth: preserved lemon, almond and a deep, stony minerality. The palate is dry and layered, with a saline grip and a finish that lingers. This is Muscadet built to age.
Serve with roast poultry, richer seafood or hard cheese. Lightly chilled, and worth decanting.

View all Château du Coing de St. Fiacre winesChâteau du Coing de Saint-Fiacre sits at the meeting of the Sèvre and Maine rivers, the very heart of the Muscadet country south-east of Nantes. The estate takes its name from this confluence, and its vineyards have long been among the most respected in the appellation. Few addresses are so bound to the identity of their wine.
The grape is Melon de Bourgogne, grown on the schist and gneiss soils that give Muscadet its cut and salinity. The wines are made sur lie, resting on their fine lees through the winter before bottling. This ageing lends texture, a whisper of yeast, and the appellation's signature freshness.
In the cellar the approach is precise and traditional, letting the vineyard speak without adornment. There is no oak here, only clean fruit, mineral drive and a saline tang that recalls the nearby Atlantic. These are wines of clarity and quiet depth.
Muscadet has quietly become one of France's great value whites, and Château du Coing shows exactly why. Crisp, mineral and endlessly food-friendly, its wines are the natural companion to a plate of oysters.
