Intense dark cherry and cedar complemented by tobacco and bay leaf. Rich blackcurrant and toasty oak on the palate.

Cabernet with Shiraz is the classic Australian blend, predating the Rhône-style pairings now more fashionable, and it works because Cabernet gives structure and a leafy edge while Shiraz fills the middle palate. Each parcel was fermented separately in open-top stainless steel with regular pump-overs and plunging.
