Domaine Jean Goulley Chablis 1er Cru Fourchaume 2025
£29.75
The wine
Fourchaume is the largest and among the most admired of the Chablis premiers crus, running along the right bank of the Serein north of the grand cru slope and sharing much of its aspect. Expect ripe citrus and white flowers over a saline, chalky finish, with more flesh than the left-bank crus.
Chablis sits closer to Champagne than to the Côte d'Or, and its character comes from the ground: Kimmeridgian marl, a Jurassic seabed dense with fossilised oyster shell that gives the wines their chalky, saline cut. Almost no new oak is used, on the principle that the wine should taste of the place rather than the barrel.

Domaine Jean Goulley
View all Domaine Jean Goulley winesDomaine Jean Goulley was founded in 1986 and is now run by Jean's granddaughter Maud, who took over in January 2022 from her father Philippe after his nearly forty years at the helm.
The family works around eighteen hectares, of which 4.5 lie in Premier Cru appellations, the heart and soul of the domaine. In 1991 they became one of the very first certified organic producers in Chablis, a considerable act of conviction at the time, and everything is still farmed organically with restricted use of sulphur. The Goulleys believe organic methods give an expressive, sustainable soil, and the wines bear them out: pure, mineral and honest.
