The wine
Rouge Cerise is a deliberately light, fresh red built to be drunk cool, a style that suits the Languedoc heat far better than its reputation for weight suggests.
Early picking preserves the acidity and a short maceration keeps colour and tannin light, giving something closer to Beaujolais in shape than to the dense reds of the south. Domaine La Croix Gratiot is run by Anais Ricome near Montagnac in the Languedoc, a few minutes from the Étang de Thau.
