The wine
Village Chablis is the appellation at its most direct: no oak to speak of, no cru to explain, just Chardonnay on Kimmeridgian limestone.
Chablis sits on Kimmeridgian limestone, a 150-million-year-old seabed packed with fossil oyster shells, which is the source of the flinty, saline character that separates it from every other Chardonnay. The brothers Damien and Romain Bouchard farm most of their vines organically, which in a region as prone to frost and mildew as Chablis is a considerably harder undertaking than it sounds.

The brothers favour minimal intervention, using little oak to let the chalk and cool climate speak clearly. Each parcel is treated with respect, capturing the fine detail of the appellation. The result is Chablis of purity and tension.
The range climbs from crisp village Chablis to fine premier cru sites, each tracing the character of its vineyard. Every wine carries the steely, saline signature of the region.
To pour a de L'Enclos wine is to taste Chablis at its most exciting. Cool, mineral, and beautifully precise, these are whites from a name to watch.
