Durella is an ancient variety of the Lessinia hills, and it is one of the highest-acid grapes in Italy, which makes it almost useless for still wine and ideal for sparkling. It was largely abandoned before growers realised what that acidity was worth. Cantina di Gambellara works the hills of the Province of Vicenza in the eastern Veneto, on volcanic soils.
