Les Hauts de Milly

Les Hauts de Milly is a fine family domaine based in the village of Milly, at the heart of Chablis. It is run by Didier Defaix and Hélène Jaeger-Defaix, who tend vineyards across Chablis, Rully and the Côte d'Auxerre. All the vineyards are farmed organically, several in conversion to full certification. Grapes are brought to the cellar in Milly, on the left bank of the Serein, where the couple keep a close eye on quality and ageing. The range runs from a fresh Bourgogne Chardonnay and pure village Chablis to premier cru wines from Chablis and the Côte Chalonnaise, including a rich Rully 1er Cru Mont Palais. Each shows crystalline Chardonnay fruit and racy acidity. Precise, mineral and beautifully made, the wines of Les Hauts de Milly capture the cool heart of Chablis. They are pure, energetic and true to their sites. This is white Burgundy of real class and value.
