Château de l'Ou is an organic estate at Montescot in the Roussillon, owned by the oenologists Severine and Philippe Bourrier. They bought it in 1998 and converted to organic farming immediately, which was an unusual step in the Roussillon at the time. It is now certified by Ecocert.
The name means egg in Catalan, and refers to an ovoid resurgence of water found on the property that the Bourriers wanted to bring back to life through the project. The estate began at 30 hectares and had added a further 45 by 2018.They work with an unusually wide range of fermentation vessels, from terracotta and sandstone amphorae through to barrel, and the results are supple and distinctive.
